Chinese New Year is barely over and we have another holiday peeking around the corner! How time flies! Yes, its the month of February.. The month of Valentine’s Day!

One word, yet it hold so many different meaning to different people!

This day is not designed only for couples. Make everyone feel special and appreciated! Yes, I am talking about Pasta! Of course  you can do your own homemade pasta a week or a few days before and freeze them, ready to go on Valentine’s Day! Or this recipe will taste delicious with store bought pasta. This takes 30 minutes maximum to prep. Serve it with your favorite bottle of wine or champagne. The warm chocolate cake will go really well to end the meal without breaking a sweat! Enjoy it!

Ingredients:
-Pasta (Homemade or store bought)
– Lots of Garlic
-Dried Basil
-Dried Oregano
-Cherry Tomatoes
-Olive oil
-Prosciutto, cut into bite size pieces
-Mushrooms, cleaned and trimmed to bite size

Method:
1. Boil and salt your water to cook the pasta
2. Chop all your ingredients
3. Boil your store bought pasta as it will take the longest to cook
4.Heat your prosciutto with a little bit of olive oil until crispy and fat is rendered,
5. Take out the crispy prosciutto (put in your homemade pasta in your boiling water at this stage)
6. Add garlic and dried herbs on medium-low heat until garlic and herbs are fragrant. Do not burn the garlic!
7. Add mushrooms and cherry tomatoes, salt and pepper to taste
8. Add your al dente (3/4cooked pasta) and stir together with your cooked mushroom sauce. Finish it off with one tablespoon of butter, season with salt and pepper to taste
9. Add your prosciutto back to the pasta and serve with your favorite steamed veggies.

The best thing about this recipe is that everything is interchangeable. Once you get the basic sauce done, you can substitute the type of protein and vegetables to suit your taste. We had made the same pasta with shrimp and roasted bell peppers. Exchange the prosciutto with shrimps. This taste divine. Seafood lovers out there, you have to try this!
